The dales
Nestled into a hill on our Tamar Valley property, our cider mill was designed following the traditional principles of a French ‘cave’, which creates a fantastic cellaring atmosphere for our ciders to mature in. Built to rest into the natural slope of the landscape, the design ensures our cellar maintains stable temperatures that are optimal for the long-term ageing of our ciders.
Handcrafted just like our cider, our mill has been built with sustainability in mind. As you wander through the space, you’ll notice repurposed materials and upcycled items, each with their own story.
Look closely at the structure of the mill itself and you’ll find weathered cladding recovered from Launceston’s Seaport Boardwalk and steel beams from the Burnie Wharf.
Lovingly built by Chris and Caro, they have taken care to create something distinctive and deeply rooted in Tasmania’s history, much like the story of Mathew Brady himself.
